Healthy eating is one of the key pillars to leading a disease free life. But with today’s busy lifestyles, this has become more of a challenge for all of us. One way to eat a healthy and wholesome meal is to make this easy and quick Buddha Bowl. I find this very easy to make without a drop of oil in it, completely dairy and wheat free and full of goodness. Here’s how:
- Add a bed of greens at the bottom of your bowl. You can add any or all of these from Romaine Lettuce, Kale, Baby spinach and BokChoy.
- Add cooked brown rice. I cook mine in the instant pot with a bit of salt for taste. You can choose to use Quinoa instead or any other grain for some carbs.
- Add in some cooked chickpeas or black beans for protein.
- Add chopped cucumbers, carrots, bell peppers, broccoli.
- Add cherry tomatoes (or chopped tomatoes), berries (strawberries, black berries, blue berries, raspberries). Berries have great anti-oxidant properties and help fight inflammation in the body, so a great addition.
- Add flax seeds, pumpkin seeds, walnuts and any other nuts you like.
- You can also add items like boiled eggs, falafel
- Fruits like oranges and chopped apples add great taste
- Finally, add any sauces that appeal to your taste buds. I tend to use these in various combinations: Peri-Peri, salsa, sour cream (unless you are avoiding dairy), coriander chutney, salad dressing
